Bhindi Curry Recipe step by step
- Cut the okra into pieces of 1 inch size and saute them in oil for five minutes till it becomes a golden colour. Then keep it aside..
- Heat a curry pan with oil and add mustard seeds, fenugreek seeds, some curry leaves to temper. After tempering, add chopped onions and once the onions are soft and golden, then add 3 tbsp of Kulambu powder (Curry powder) and chopped tomato. Cook until everything turns into a paste..
- Then add tamarind juice (soak lemon size tamarind in water for sometime and then extract the juice) and add enough water and salt to taste. Cook for 10 minutes..
- Then add roasted Okra and cook for few minutes till the gravy boils and thickens a bit..
- Meanwhile, in a blender add grated coconut, garlic, shallots,cumin seeds and grind it to a coarse paste. Add some water if required while grinding to make a coconut base..
- Once the gravy becomes thick, add coconut mixture and cook for 5 minutes until the oil separates at the sides..
