Ingredients of Spinach Borani Dip
- Prepare 1 of big bunch of baby spinach.
- It's 1 cup of yoghurt.
- It's 6-7 Tbsp of olive oil.
- Prepare 2-3 of garlic pods chopped fine.
- You need of Few sprigs of mint leaves chopped.
- It's of Few pistachios chopped.
- You need of Salt as per taste.
Spinach Borani Dip instructions
- Chop the garlic fine. Chop the mint leaves fine. Whisk the yoghurt well. Add some of the chopped garlic to the yoghurt.
- Blanch the spinach and drain out all water. Chop fine.
- In a wok heat 1 Tbsp olive oil and add rest of the garlic. Sauté for a min and add the chopped spinach. Sauté for 2-3 mins. Set aside.
- Cool the spinach and drain out all excess water again. Add to the yoghurt. Mix very well.
- Before serving add to a bowl and garnish with chopped pistachios, drizzle with lot of olive oil and add the mint leaves. Enjoy with Roti.
